What many people don't realise is that the term 'Belgian waffle' actually refers to two different types of waffle: the Brussels waffle and the Liège waffle.
Brussels waffles are light and airy with deep square pockets and are made from a batter-based dough.

Where do Belgian waffles come from?
Waffles date back to the Middle Ages, when they held religious significance. But the Belgian variations came much later.
Brussels waffle:
It is said to have been invented in 1856 by Maximilian Consael in Ghent, not Brussels. He toured local fairs with his cast-iron waffle irons to promote his creation.
The Liège waffle:
According to legend, a 18^(th)-century prince from Liège asked his chef to prepare a pastry rich in sugar. The result was a brioche-style dough with pearl sugar, and so the Liège waffle was born.
