Whether sweet or savoury, crêpes are a true kitchen all-rounder. We’ve tested and selected three recipes that are simple to make yet guaranteed to impress. Here are our three favourites, which are perfect for any occasion.
Crêpes with warm pears – a fruity, sweet delight!
For the batter, you’ll need:
100 ml milk, 4 eggs, 3 tbsp flour, a pinch of salt and a splash of oil.
Whisk everything together and leave the batter to rest briefly. Heat a little oil in your crêpe pan and cook the crêpes until golden brown.
For the pear topping, peel and core four pears, then slice them. Caramelise 80 g of sugar in a saucepan, deglaze with 150 ml of white wine and add the pear slices, along with cinnamon and star anise. Simmer gently and finish with a dash of pear brandy.
Fold each crêpe into quarters, top with the warm pears and serve with a scoop of vanilla ice cream – simply divine!
Crêpes Suzette – the classic French flambé.
To make the batter, whisk together 2 eggs, 300 ml milk, 150 g flour and 1 tablespoon of sugar until smooth. Leave to rest for 20 minutes, then fry thin crêpes in a little butter.
For the sauce, use the juice and zest of four oranges, four tablespoons of sugar, three tablespoons of butter and six cl of Grand Marnier.
Caramelise the sugar with the butter, deglaze with the orange juice and add the zest and orange segments. Leave to thicken slightly, then warm the crêpes in the sauce. Add the Grand Marnier and flambe. Dust with icing sugar and garnish with mint. A spectacular dessert!
Savoury crêpes with smoked salmon – a party favourite!
To make the crêpes, mix 450 g of flour, 50 g of butter, 7 eggs, 500 ml of milk and a pinch of salt to make a smooth batter. Then cook until golden.
For the filling, mix 500 g of cream cheese with 50 ml of cream until it is spreadable. Add herbs or a touch of crushed coriander if desired.
Spread the mixture over the crêpes, add fresh basil and slices of smoked salmon, then roll up tightly. Wrap in cling film and chill overnight. The next day, slice into pieces – the perfect appetiser!
